Controlled Maturation

Because we control both the Port and the cask, we can guarantee a level of traceability, consistency, and quality that others simply cannot replicate.

Every cask begins its journey in our cellar, where it’s filled with our own high-quality Port Wine.

The seasoning process is always made under the direct supervision of our Cellar Master whose expertise and know-how ensures a precise and harmonious process.

When the seasoning reaches its ideal maturity, each cask is gently emptied, prepared, and readied to embark on its next journey.

Port Wine Casks from a Port Wine Perspective

Our approach is shaped by our origin as Port Wine producers. For spirit finishing, the quality of the Port Wine used in seasoning is fundamental.

Great seasoning starts with great Port.

RUBY PORT CASKS

For its extremely good quality, LATE BOTTLED VINTAGE PORT (LBV) was our option to season our casks.

For a Port wine producer LBV is the 2nd choice in quality after Vintage Port.

As the name shows Late Bottled Vintage is a vintage bottled later at least 5 years after the harvest. LBV is a port from a single year full bodied with a bright full ruby colour, on the nose shows the freshness of red fruits like raspberries and blueberries with some hints of eucalyptus.

TANWY PORT CASKS

The natural evolution of a Ruby Port ageing in a cask, is a Tawny Port with age, the colour of the wines slowly develops into beautiful darker or lighter golden colours offering a different colour pallet and bouquet.

The ageing in cask of our LBV style delivers tawny categories like Tawny Reserve , 10 years old , 20 years old and plus.

Depending on the time spent in cask, the wine slowly develops into a tawny, a medium tawny and light tawny colour, with elegant and complex aromas showing notes of dry fruits, like almonds and nuts, dried apricots and orange peels.

WHITE PORT CASKS

We are a white port lover family. Because of our passion we always kept in our cellar white Port, ageing in barrels, following the natural evolution over the years.

There are several styles of white Port depending on the time spent in wood and the sweetness. At Projecto X we decided for a Dry White Port and aged style. It’s our deep conviction that the most interesting White Ports are those that, like Tawnies, have been aged in wood.

The ageing in casks gives the white port a fullbody, a beautiful golden color with nuttiness, spiciness and crystalized orange peel aromas.

With over 40 years of experience in the Port wine industry, António Valente founded Projecto X in 1999 after leaving the Symington Group, where he managed the group Port wine quality as cellar master.
